This book in praise of the potato, the most versatile and delicious of vegetables, is one I thoroughly enjoyed. Having a penchant for the potato I am an easy mark for the creative use of this lovely vegetable.
Ms Souter shows us over and over again in this well defined book how very diversified one can be with the potato. She gives general information on the types of potato grown in Australia and those types usually available at the local markets, which type to use according to methods of cooking, and growing and storing potatoes.

Her recipes span the entire menu from soups and entrees through to desserts, potato doughs and even potato drinks (vodka, of course). Ms Souter also includes some exciting and novel ideas for the potato, even to the breakfast menu, such as potato and banana pancakes with champagne for breakfast. Or orange juice with vodka, packed in ice with a potato quiche for a picnic. I found the potato desserts rather unusual, but after trying a few recipes I was pleasantly surprised, they were excellent.
For those of you who do not indulge because of its fattening reputation, this is not so! An average potato of 150–75 grams has only 115 calories, about the same as a half cup of cottage cheese, plus the bonus of fifty percent of adult daily requirement of Vitamin C, a large amount of Vitamin B and food fibre and about four grams of protein.
If you tend to cook potatoes in the same old tired way and would like to be adventurous then this book will certainly add to your repertoire and make some delicious additions to your meals.
